Tortilla de patatas – Recipe step by step
Ingredients
- 3-4 potatoes
- 1 onion
- 4-5 eggs
- Olive oil
- Salt
Step by step
- Start by adding sliced potatoes and onion to hot olive oil in a heavy pan. They need to be fully covered in oil. We add salt and »cook« the potatoes on medium heat (remember you don’t need to fry them).
- While the potatoes and onion are cooking, we beat eggs in a large bowl (you will probably need at least 5 eggs). We add salt to the eggs.
- Next, you need to drain the potatoes in a large colander (save the excess olive oil for another recipe!) and stir them into the egg mixture.
- Gently pour the mixture in a frying pan over medium-low heat and leave it for a few minutes. Then take a large plate and put it over the pan to flip the tortilla (check out the video on how to flip it, if it’s the first time you’re doing it).
- Slide the tortilla back into the frying pan and cook it for another few minutes. Next flip it out into a clean plate and serve it with a slice of bread and sauce like ali-oli.
Since tortilla de patatas is so versatile, you can eat it for breakfast, lunch, dinner, as a snack. Some Spanish people say that the »authentic« tortilla is with onions, other defend tortilla without onions, and some prefer »tortilla poco hecha«, others say it has to be »bien hecha«. We think tortilla is so good and there are plenty of delicious combinations of tortilla. It doesn’t matter which version you’ll choose because tortilla in any of its combinations it’s always a perfect choice.
